“Kir-Yianni” was founded in 1997 by Yiannis Boutaris, one of the leading figures in the Greek wine industry, when he left the Boutari Wine Group, the premium family wine company that his grandfather established in 1879. Balancing between the hundred-year long family tradition & the use of new, innovative techniques in winemaking, the aim of “Estate Kir-Yianni” is to produce wines that appeal to the taste of the modern consumer reflecting the potential of the Greek vineyard & of its indigenous varieties, such as the noble red Xinomavro. The activities are entirely based on the principles of integrated farming. Proper care in the vineyard, strict selection on the vine & in the cellar, micro-vinification & meticulous blending form the core of their practices & endow “Kir-Yianni” wines with typicity, ageing potential & consistent quality from vintage to vintage.
Xinomavro, “acid & black” in Greek, is one of the world’s rarest noble red grapes originating from Northwestern Greece. Despite its sensitivity to suboptimal conditions & disease outbreaks, it is endowed with a divine talent for unforgettable wines. In the area of Northern Greece, the variations in the climate & the properties of the ground form vineyards that show a very different character from place to place. Xinomavro is an extremely versatile variety able to produce wines in a very wide range of styles, from blanc de noir to rosé & deep red, still or sparkling, dry or sweet.
“Ramnista” is made from single-vineyard Xinomavro grapes of Naoussa’s PDO zone, that are carefully handpicked & sorted on a conveyor belt before crush. In order to enhance the wine, the “pigeage” method is applied where the grape solids are pushed back into the wine for the proper extraction of colour, flavour & tannins. The final blend is made five months after harvest & the last racking takes place about eight months later. A wine with rare aromatic complexity, intense tannin structure & robust acidity. It is fruity with unique vegetal notes, firm, with a crisp freshness & a lingering aftertaste. An excellent pair for red meat & game.
