Koukouvagia (Owl)
Ingredients
- 4x Kritharokoulouritses – Mini Barley Rusk Rolls (1x ⇒ 2x Halves)
- 1x Polpa – Finely Grated Tomatoes
- 1x BIO Mizithra Cheese
- Fine Sea Salt
- Extra Virgin Olive Oil
- Aroma Tale – Greek Herbs Mix
- Extra: Pitted Kalamata Olives, Pickled Vine Tops or Capers
Instructions
The “wise” Cretan salad… the base of the Mediterranean diet!!!
Enjoy it as a healthy breakfast, a filling lunch or a light dinner.
Get the small rusk rolls (also known as ntakos), open them & slightly wet them from the cut side with cold water to soften (you can skip this part if you leave them more time to soak with the tomato juice). Place them on a serving plate/surface with the cut on top. Pour slowly the tomato juice on them & spread it with a spoon if needed. Sprinkle a bit of sea salt & then divide the mizithra cheese on them. You can top them with pickled vine tops, capers or chopped kalamata olives for extra flavour. For sure, you sprinkle with the herb mix & drizzle with a generous amount of extra virgin olive oil!
