“Sativa Olive Culture” was founded in 1997 in Molaoi (Laconia, Peloponnese) motivated by the love for the “olive civilization” & the deep-rooted belief that a healthy human relationship with the land, nature & its products leads to a better quality of life. They chose a region full of olive groves where the “Kalamata” variety is mainly cultivated. So, they work inside their natural environment “cultivating” a different relationship with the land. They exclusively select olives, from Peloponnese (Kalamata) & Halkidiki (Green), that are grown in perfect soil & climate conditions, a choice that is reflected to the unique taste, aroma & texture of their products.
This green olive variety is named after the Halkidiki peninsula where it mostly thrives in Greece. By “cultivating” long-term partnerships with producers of that area, “Sativa Olive Culture” is supplied with green olives of exceptional quality. The Greek green olive variety of Halkidiki has a higher concentration of oils compared to the ones from other Mediterranean countries & that is why has a bright straw yellow colour, full taste & fruit cohesiveness. Additionally, it has a high flesh to pit ratio.
