Rosemary (Salvia rosmarinus) is a woody, perennial herb of the Lamiaceae family & is native in the Mediterranean region. It has fragrant, evergreen, needle-like leaves & white, pink, purple, or blue flowers. Its name derives from the Latin “ros marinus” meaning “dew of the sea”. Rosemary leaves (fresh or dried) are used in traditional Mediterranean cuisine. They have a bitter, astringent taste & a characteristic aroma which complements many cooked foods. Herbal tea can also be made from them.
